Horse meat cooked
Salt the horse meat and powder it with the black pepper. Then leave it in the fridge for 1 hour. Chop finely the fresh spices, together with the garlic and the red onion and mix them with the wines. Then wash the meat and add the marinade. Leave it for another 24 hours in the fridge. The horse meat is very dry. Due to the low percentage of fats it may stay longer in the marinade in order to become more juicy. Roast the meat at grill or preheated grill pan at each side for 3-4 minutes. It is important not to be overcooked. After it is roasted the meat is recommended to be wrapped in metal foil.
